A soft and chewy cookie with a hint of lemon flavor and topped with fun colorful sprinkles!
Sprinkles make me happy! They add a fun dimension to an otherwise simple cookie. And why not start the week with something fun and happy. In fact, I have fun posts happening all week long. These cookies are soft sugar cookies topped with fun colored sprinkles. I add lemon zest and lemon extract to give them a hint of lemon flavor. Everyone will love these cookies, so why not bake up a batch for your friends or neighbors and add a little happiness to someone’s day.

3/4 cup (12 tablespoons) unsalted butter, softened
1 cup sugar
1 teaspoon vanilla extract
1 teaspoon lemon zest
For the glaze:
2 1/2 cups confectioners' sugar
1/4 cup water
1/2 teaspoon lemon extract
In a medium bowl, combine flour, baking powder and salt; set aside. In the bowl of an electric mixer fitted with a paddle attachment, beat butter and sugar on medium speed until light and fluffy, about 3 minutes. Add eggs, vanilla and lemon zest and beat until combined. Reduce speed to low and slowly add flour mixture. Mix until dough forms. Cover and refrigerate dough for at least one hour.
Preheat oven to 375 degrees. Line a baking sheet with parchment paper; set aside. Roll out dough to 1/4" thickness on well-floured surface. Cut with 2 1/2 inch round cookie cutter and then place on lined cookie sheet. Bake for 8 minutes. Cookies should not brown. Remove and let cool completely on wire rack.
To prepare the glaze, in a large bowl, whisk together the confectioners' sugar, water and lemon extract until smooth. Dip cookies into glaze face down, letting the excess drip off. Place back on a wire rack set over wax paper and sprinkle liberally. Let set for one hour before serving.
