I always love the arrival of summer because it means plenty of backyard picnics, dinner parties and reasons to entertain. I love entertaining because it is an excuse to cook or bake an assortment of food and not have to eat it all myself. When entertaining, it is best to make an easy yet impressive meal. Relax and chat with your guests rather than focus on cooking an elaborate meal. Today, I’m sharing these mango, blackberry and feta bites because they are the perfect quick and easy appetizer to serve at your next dinner party.
If these bites look simple, that is because they are simple. This recipe is so easy, I almost wasn’t sure whether I should post it. Its literally just blackberries and mango stacked on top of a chunk of feta cheese and drizzled with balsamic reduction. But let me tell you, they are the perfect summer appetizer. The fresh, juicy flavor of the berries and mango combines with the salty flavor of the feta to create a refreshing summer treat.
I often make a plate of these mango, blackberry and feta bites for lunch and eat them all by myself. Or serve these fresh and easy bites at your next dinner party. What are you favorite quick and easy appetizers for outdoor entertaining?
- 1 cup balsamic vinegar
- 12 large blackberries
- 1 mango, diced into bite-sized pieces
- 1 (7 ounce) package feta, cubed
- To prepare the balsamic reduction, in a small saucepan over medium-high heat, bring balsamic vinegar to a simmer. Reduce heat to medium-low, and simmer until the vinegar has reduced to 1/4 cup, about 20 minutes. Set aside and let cool.
- Arrange blackberry, mango and feta on skewers. Drizzle with balsamic reduction and serve.
