Coconut Cream Pie Energy Bites
Save Recipe

  • 1/2 cup almonds
  • 1/2 cup cashews
  • 1 1/2 cups Medjool dates*, pitted
  • 1 tablespoon coconut oil
  • 1/2 cup unsweetened coconut

  1. Add the almonds and cashews to the bowl of a food processor. Pulse until nuts are finely chopped (but do not pulse too long, you do not want the nuts to turn into a paste). Add the dates and coconut oil. Pulse until the dates are finely chopped and the mixture starts to clump. Shape the mixture into 1 1/2 inch balls. Roll in coconut to coat outside of the balls. Store in an airtight container in the refrigerator.

If Medjool dates are not available, any other pitted date will work.

  1. Julie @ This Gal Cooks

These look so darn good, Ashley! I need to make some of these for easy grab n go snacking. I also need to try some of those Starbucks teas. I usually go for the same ole Caramel Macchiato whenever I go there but it would be nice to change it up sometimes!
Hope you have a great weekend, Ashley!

  2. Serene @ House of Yumm

Ashley these little energy bites sound absolutely delish! I love coconut stuff. So summery. And those starbucks drinks sound perfect for summer too! I usually get the same thing every time I go there. Maybe it’s time to switch it up 🙂

  3. Min @ MJ and Hungryman

  9. Erin {Delightful E Made}

Hi Ashley! These energy bites look fantastic. I made some energy bites a few weeks ago, and you’re so right. They really do make great on-the-go snacks. Much better than something not-so-healthy you would get at a drive-thru or convenience store.
Have pinned and will be sharing on my DEM facebook page later today.
    Have a great weekend, Ashley!

Thanks for the recipe. I have just made this delicious energy bites. I used raw almonds and salted macadamias and cashews (all I had in the pantry) and tastes like “salted caramel”. So good. Good recipe. Will try again with raw cashews…

    • Ashley

Hi, Maggie! I am so glad to hear that you loved them. The addition of the salted macadamias sounds incredible!
