Happy Holidays! I can’t believe that Christmas is only a few days away and the end of 2015 is coming to a close. 2015 was quite a year and I can’t wait for 2016! As my final new recipe for this year, I am sharing a simple salad made with one of my favorite organicgirl blends. This recipe came together at the last minute for a holiday dinner party. I wanted a side salad that was fresh, seasonal and easy and I already had all of the ingredients that I needed for this recipe. In fact, I even picked the fresh tangerines from my citrus trees. The Winter Harvet Salad with wild rice, cranberries and citrus is crisp, crunchy and flavorful.

For this recipe I used organicgirl I heart baby kale blend. The blend is always in my fridge because it is versatile and makes a great addition to salad, pasta and more! I added wild rice, tangerines, red onion, dried cranberries, and pepitas. Then, I tossed the salad in a simple citrus vinaigrette.

Winter Harvest Salad with Wild Rice, Cranberries, and Citrus

Ingredients

  • 5 ounces organicgirl i heart baby kale
  • 2 tangerines or Mandarins, peeled and sliced into segments
  • 1 cup cooked wild rice
  • 1/2 cup dried cranberries
  • 1/4 cup sliced almonds
  • 1/4 cup diced red onion
  • 3 tablespoons pepitas
  • For the dressing:
  • 2 tablespoons freshly squeezed orange juice
  • 1 tablespoon freshly squeezed lemon juice
  • 1 tablespoon extra virgin olive oil
  • 2 teaspoons honey
  • 1 teaspoon red wine vinegar
  • 1/8 teaspoon freshly ground black pepper

Instructions

  1. In a large mixing bowl, add the i heart baby kale, citrus, wild rice, cranberries, almonds, red onion, and pepitas. Toss to combine.
  2. In a small bowl, whisk together the orange juice, lemon juice, olive oil, honey, red wine vinegar and black pepper. Add half of the dressing to the salad and toss. Add remaining dressing, as desired. Serve immediately.
