Avocado toast is so simple yet so good. It’s my go-to lunch and I am known to eat it every single day of the week. As long as you have bread, avocado and a few other simple ingredients, you can make it. Today, I’m sharing Avocado Toast Three Ways including recipes for my favorite combinations with Strawberry Balsamic Avocado Toast, Smashed Avocado Toast with Egg and Sweet Pea, and Whipped Goat Cheese and Cucumber Avocado Toast. Avocado toast is simple to make. I am pretty sure that you could do it with your eyes closed. After all, it’s really just a slice of your favorite bread topped with sliced or smashed avocado and your favorite toppings. I like to top my toast with extra greens so I use whatever organicgirl salad blend I have on hand. Sweet Pea, Super Spinach and baby spinach and arugula are a few of my favorite blends to use for avocado toast. I also love adding my super green whipped goat cheese to the toast for extra greens and delicious flavor.

To make the Strawberry Balsamic Avocado Toast, scoop out the avocado flesh into a small bowl. Add a small amount of salt and pepper, to taste. Mash with a fork to combine. Spread the mashed avocado evenly onto the toasted bread slices. Divide the remaining ingredients between each of the toasted bread slices, starting with the baby spinach and arugula, strawberries and then almonds. Serve with balsamic vinegar or glaze, as desired.
To make the Smashed Avocado Toast with Egg, scoop out the avocado flesh into a small bowl. Add a small amount of salt and pepper, to taste. Mash with a fork to combine. Spread the mashed avocado evenly onto the toasted bread slices. Divide the remaining ingredients between each of the toasted bread slices, starting with the Sweet Pea blend and ending with the boiled egg. Serve with an additional sprinkle of pepper, as desired.
To make the Whipped Goat Cheese and Cucumber Avocado Toast, cut the avocado flesh into small slices. Divide the whipped goat cheese between the two slices of toasted bread. Top each with super spinach blend, sliced avocado, and cucumber. Serve with red pepper flakes, as desired.
