The arrival of fall means endless opportunities for baking. It also means apple picking, pumpkin picking and Halloween. After my recent visit to New England, I returned home on the quest to make anything and everything with fresh apples and apple cider. Greek Yogurt Apple Spice Bread is packed with fresh apples and fall spices. Your kitchen smells amazing while it is baking and you won’t be able to resist eating more than one slice. Kids and adults will love this easy bread made with the freshest flavors of the season!

To celebrate our favorite fall flavors, I partnered with the National Frozen and Refrigerated Foods Association (NFRA) as part of the Cool Food Panel to bring you a fresh apple bread straight from the oven. I lightened up the bread by using Dannon Oikos® Plain Greek Yogurt. Located in the dairy of your local grocery store, Greek yogurt is a versatile addition to baked goods. It adds a light and fluffy texture, cuts fat and adds protein without sacrificing flavor. Stock your fridge with Dannon Oikos Plain Greek Yogurt and use it in your favorite fall recipes. Use it in place of buttermilk in pancakes or instead of mayo in chicken salad. The options are endless for creating delectable meals with your favorite fall flavors.

Ingredients:

For the bread:

  • 1 granny smith apple, peeled, cored and chopped into small pieces
  • 1/3 cup light brown sugar
  • 1 teaspoon cinnamon
  • 1/2 teaspoon allspice
  • 1/2 teaspoon nutmeg
  • 1 1/2 cups white whole wheat flour
  • 1/2 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup Dannon Oikos® Plain Greek Yogurt
  • 1/2 cup unsweetened applesauce
  • 2 eggs
  • 2 teaspoons pure vanilla extract
  • 5 tablespoons unsalted butter, melted

For the crumble topping:

  • 1/2 cup all-purpose flour
  • 1/4 cup light brown sugar
  • 1 teaspoon cinnamon
  • 1/3 cup chopped pecans
  • 3 tablespoons cold unsalted butter

Directions:

  1. Preheat oven to 350 degrees F. Butter and flour the bottom and sides of a 9 x 5 inch loaf pan; set aside.
  2. In a small bowl, combine chopped apples, brown sugar, cinnamon, allspice and nutmeg; set aside.
  3. In a medium bowl, whisk together flours, baking powder, baking soda and salt; set aside.
  4. In a large bowl, stir together yogurt and applesauce until combined. Add eggs, one at a time, mixing until combined. Add vanilla and butter and stir until incorporated.
  5. Gradually add the dry ingredients to the wet ingredients until barely combined. The batter will be thick but be careful not to over-mix.
  6. Using a rubber spatula, gently fold the apples into the batter. Transfer batter to prepared loaf pan.
  7. To prepare the crumble topping, combine the flour, sugar, cinnamon and pecans together in a small bowl. Use your fingertips to work the cold butter into the flour mixture. Sprinkle the crumble topping over the batter in the pan and gently press down with your hands.
  8. Bake for 40 to 50 minutes or until a toothpick inserted into the center comes out clean and the top is golden brown. (You can cover the bread with foil during the last ten minutes of baking time to prevent over-browning.) Cool in pan for 10 minutes then transfer to a wire rack to cool completely. Enjoy!
