BBQ Chicken Pizza is a favorite that you can make at home!
I’m pretty sure that I would get fired from a pizza kitchen. I cannot toss, roll or form dough at all. I mean, I can roll the dough enough to get it into the size and shape of a pizza pan, but it is far from perfect. I’m sure with enough practice and a focus on technique I could improve my pizza tossing skills, but I’ve never really needed to since I live with a professional pizza chef. Okay, maybe not a professional, but Brad is far better at rolling out pizza dough then I am. Sometimes, I think he thinks he is a professional (as he tosses dough into the air and I wince as it almost hits the floor). In our house, when it comes to making pizza, its a team effort. Brad forms the dough into a pizza and I add the toppings.
The combination of the toppings makes this one of my favorite pizzas. I love how the pineapple adds something sweet and juicy and the cilantro always adds something unique and fresh. If you wanted to kick the spice up a bit, you could also add a few diced jalapenos.
I like my crust very thin, so I usually use half of a standard size ball of pizza dough. I recommend using your favorite barbecue sauce with this pizza. Stubb’s original bbq sauce is my personal favorite.
BBQ Chicken Pizza
- 1 ball pizza dough
- ¾ cup barbeque sauce
- 1 cooked chicken breast chopped into bite-sized pieces
- 5 ounce mozzarella cheese sliced
- 1 cup diced pineapple
- 1/3 cup thinly sliced red onion
- ¼ cup fresh cilantro chopped
- Heat the oven to 450 degrees and preheat a pizza stone.
Roll the pizza dough into a 12 to 14 inch round. Spread half of the barbeque sauce in a thin layer on to the dough. Layer the chicken and mozzarella cheese over the barbeque sauce covering the entire pizza. Top with pineapple and red onion. Bake until the cheese is melted and bubbling and the crust is lightly browned, about 10 to 12 minutes. Remove from the oven and cool slightly. Garnish with cilantro just before serving.
- Note about pizza dough: I like my pizza crust very thin. I generally use half of a standard size ball of pizza dough.
