I’m always trying to find delicious ways to use up my summer berry stash and making a cobbler is a perfect way! This simple dessert takes fresh blackberries and turns them into a decadent dessert that tastes great any time of the year. Simply mix fresh blackberries with sugar and lemon, then add a crumbly cobbler biscuit crust on top made with flour, sugar, and egg and bake until golden brown on top. 

What is a cobbler?

Many people have different definitions of what a cobbler actually is. Cobbler is made with baked fruit on the bottom and a crumbled crust on top. This creates a “cobbled” look on top which is where the name originates. You can use whatever fruit you enjoy to make a fruit cobbler, this one is delicious with fresh blackberries!

How To Make Blackberry Cobbler From Scratch

Step 1. Prepare blackberries for baking. Preheat the oven to 375 degrees Fahrenheit. Place blackberries in a lightly greased, shallow 1-quart baking dish. Sprinkle with lemon juice and 2 tablespoons sugar, then toss to coat; set aside.

Step 2. Make the cobbler crust. In a large bowl, mix together remaining sugar, flour, brown sugar, and salt. Stir in the egg until the mixture resembles a coarse meal. Sprinkle the biscuit mixture over the berries, then drizzle the butter evenly over the cobbler.

Step 3. Bake and serve. Bake for 40-45 minutes, until golden brown and bubbly. Allow it to stand at room temperature for 10 minutes before serving with ice cream or freshly whipped cream if desired.

  1. Make sure you choose ripe, juicy fruits as they will produce a sweet cobbler that won’t be bitter. 
  2. When using sugar with the berries, taste the berries first to see how sweet they are and adjust sugar to your personal tastes.
  3. Do not overcrowd the biscuit topping as it will create steam inside the cobbler making it unable to become crunchy. 
  4. Right out of the oven, the berries may look a bit thin, this is why it is important to cool at room temperature for 10-15 minutes before serving as it will thicken as it cools.

Variations

  • Using frozen berries. If you can’t find fresh, you can use frozen blackberries in this dish, just make sure you keep them frozen as thawed blackberries can be a bit mushier which will change the texture of the cobbler. 
  • For a thicker cobbler, add a tablespoon of cornstarch to the blackberries and sugar. 
  • Adding more berries. You can make this a mixed berry cobbler by adding some strawberries, blueberries, and raspberries to the mix. 
  • Give the cobbler a warming flavor by adding some cinnamon or pumpkin pie spice to the cobbler crust. 
  • Don’t want to make the crumbled cobbler crust? Use a drop biscuit crust or pastry crust on top instead.

Notes

Storing: Any leftover blackberry cobbler can be stored on the countertop for 3-4 days if tightly wrapped. You can also store it in the fridge, but the crumble may get a bit soggy. 
Freezing: Because the crumble is meant to be dry, freezing then thawing may change the texture therefore freezing is not recommended.
