Chocolate covered cherry bites are a quick and easy no-bake treat! They are paleo and vegan friendly too!
One of the most popular recipes on my blog is my Key Lime Coconut Energy Bites. Everyone loves them because they are easy, no-bake, refreshing and both paleo and vegan friendly. And best of all, they only require a few ingredients and one food processor. So when one of my good friends, who loves the key lime bites, requested a chocolate covered cherry treat I knew that I had to create something special. Chocolate covered cherry bites are perfect for when the chocolate craving hits and you want something slightly sweet but not over-indulgent. I make a batch and save them for a mid-afternoon snack or a post-dinner treat.
Have you ever tried dried cherries? You can use any kind in this recipe, sweet or unsweetened. I use the dried cherries that are slightly sweetened with apple juice to avoid the addition of refined sugar. You can find them at Whole foods, online or other food stores. If you have never tried dried tart cherries, I am warning you that they are addicting. They are also good for heart health so I try to eat a small handful as often as possible. I add them to yogurt, smoothies, granola bars and these chocolate covered cherry bites.
If you love the Key Lime Coconut Energy Bites then you are going to love these. The process and ingredients are similar, but I use chocolate and cherries instead of the key lime and coconut to create this unique flavor.
Chocolate Covered Cherry Bites
- 1/2 cup almonds
- 1/2 cup cashews
- 1 cup Medjool dates* pitted
- 3/4 cup dried cherries
- 1 tablespoon cocoa powder
- 1/4 cup semi sweet chocolate chips
- Add the almonds and cashews to the bowl of a food processor. Pulse until nuts are finely chopped (but do not pulse too long, you do not want the nuts to turn into a paste). Add the dates, cherries and cocoa powder. Pulse until the dates are finely chopped and the mixture starts to clump. Shape the mixture into 1 1/2 inch balls. If the mixture feels too dry, work it together with your hands. Melt chocolate in a heat proof bowl set over a pot of simmering water. Drizzle melted chocolate over bars and let set. Store in an airtight container in the refrigerator.
