Apple season is here! One of the things that I miss the most about living in New England is being able to go apple picking all season long. There is nothing like picking your own apples and enjoying them fresh from the tree. As a child, each fall we went apple picking at a local orchard and filled large black garbage bags full of apples. We made apple pies, apple butter, applesauce and more with all of the freshly picked apples. We also loved stopping by the local cider mill for some fresh apple cider.
One of my favorite things to make with the fresh apples was apple snack bites. I sliced an apple, topped them with a scoop of peanut butter and then sprinkled anything crunchy on top. Sometimes they were topped with crunchy peanuts and other times I crumbled pretzels and sprinkled them on top. As an adult, I still love to eat apple snack bites because they are easy, filling and delicious. You can top them with any of your favorite ingredients but I really love to make these Chocolate Peanut Butter Crunch Apple Snack Bites.
Peanut butter, coconut, and macadamia nuts top these apples. Then I drizzle a small amount of dark chocolate for an extra special addition. Kids and adults will love these snack bites and they are the perfect after school snack. I even love to enjoy them for dessert when I want something sweet but don’t want to overindulge.

Chocolate Peanut Butter Crunch Apple Snack Bites
- 1 apple sliced into wedges
- 3 tablespoons peanut butter
- 1 tablespoon coconut flakes sweetened or unsweetened
- 1 tablespoon chopped macadamia nuts
- 2 ounces dark chocolate
- Spoon a small amount of peanut butter onto each wedge. Sprinkle with coconut flakes and chopped macadamia nuts. In a small bowl, add the dark chocolate and melt in the microwave, stirring in 30 second increments until melted. Be careful not to overheat the chocolate. Drizzle the wedges with melted chocolate and serve.
