If these bites look simple, that is because they are simple. This recipe is so easy, I almost wasn’t sure whether I should post it. Its literally just blackberries and mango stacked on top of a chunk of feta cheese and drizzled with balsamic reduction. But let me tell you, they are the perfect summer appetizer. The fresh, juicy flavor of the berries and mango combines with the salty flavor of the feta to create a refreshing summer treat.

Mango, Blackberry and Feta Bites
- 1 cup balsamic vinegar
- 12 large blackberries
- 1 mango diced into bite-sized pieces
- 1 7 ounce package feta, cubed
- To prepare the balsamic reduction, in a small saucepan over medium-high heat, bring balsamic vinegar to a simmer. Reduce heat to medium-low, and simmer until the vinegar has reduced to 1/4 cup, about 20 minutes. Set aside and let cool.
- Arrange blackberry, mango and feta on skewers. Drizzle with balsamic reduction and serve.
