Edamame is a fun snack, appetizer or side dish. I’ve been known to eat an entire bowl for lunch. It’s one of those snacks that once you start eating, you can’t stop. When you serve it with freshly grated orange zest, it is even more irresistible.
I still remember the first time I ever tried edamame. I was at dinner with friends who ordered edamame as an appetizer. When it arrived at the table, I was slightly perplexed about how to eat it, so rather than watch my friends eat it first, I put the entire bean pod into my mouth and ate it. Please tell me that I am not the only one who did that the first time? I quickly learned that you don’t actually eat the bean pod but just the delicious crunchy beans inside. I’ve been hooked on edamame ever since.
I love edamame no matter how it is prepared. But given that I have plenty of fresh citrus from the trees in my yard, I love adding fresh citrus zest. Mix a small amount of freshly grated orange zest with coarse salt and then sprinkle on the edamame pods once cooked.
I love how they are slightly crunchy and when in the pods, you actually have to work for your food. I always keep a bag of frozen edamame pods in my freezer and make a quick batch when I’m hungry. It is a great last minute appetizer before dinner or a fun after school snack for kids.

Orange Peel Edamame
- 1 tablespoon kosher salt
- 1 orange
- 2 cups frozen or fresh edamame in pods
- 6 cups water
- To make the orange salt, combine the salt and one tablespoon fresh zest from orange. Let sit on the counter for at least 8 hours to dry.
- To make the edamame, in a large sauce pan over high heat, bring water to a boil. Add edamame and cook for 5 to 7 minutes until edamame is tender. Drain well, squeeze a small amount of fresh orange juice over the pods and toss with orange salt. Serve immediately and enjoy!
