These homemade pancakes are great for both kid and adults and are a great early morning breakfast for the back to school season!

How to make peanut butter pancakes

It’s easy to make pancakes from scratch. In a large bowl, whisk together flour, baking powder and cinnamon. In a second bowl, whisk together milk, peanut butter, egg, maple syrup and vanilla extract.

Create a well in the center of the dry ingredients and pour the wet ingredients into the dry ingredients. Whisk until just combined, being careful not to overmix.

Grease a preheated skillet or griddle set over medium heat. We use butter or oil. Ladle batter into 1/4 cup portions onto the hot griddle. Cook for 3 to 4 minutes until the air bubbles form on the surface of the pancake and the bottom is golden brown. Flip and continue cooking until the bottoms are browned, about 1 to 2 minutes more. Re-grease the skillet or griddle as needed and repeat with the remaining batter.

Keep the cooked pancakes warm on a plate by covering with a towel and placing in a 175 degree F oven.

Maple peanut butter pancakes are the perfect pancakes for fall or any time of the year. In addition to creamy peanut butter, we love to add other fall flavors like maple syrup and cinnamon.

Pancake toppings and flavors

  • Peanut butter – The peanut butter adds protein and delicious flavor to these pancakes. Each two-tablespoon serving of peanut butter has 8 grams of protein, 2 grams of fiber and 12 grams of unsaturated fat. Drizzle additional peanut butter over the pancakes for even more peanut butter flavor.
  • Maple syrup – Maple syrup is one of the best fall flavors. It is also a great natural sweetener for these pancakes. Use 2 to 3 tablespoons of maple syrup as a sweetener for the pancakes and then drizzle with additional syrup when serving, as desired.
  • Cinnamon – A must for any fall-inspired recipe. You can even whisk together cinnamon and creamy peanut butter before drizzling over the pancakes for even more fall flavor.
  • Chocolate – Drizzle pancakes with chocolate syrup for sprinkle with chocolate chips to create a chocolate peanut butter combination of flavors.
  • Apples – Top the pancakes fresh or warm apples before serving. Warm apple topping is the best for pancakes!
  • Peanuts – Sprinkle coarsely chopped peanuts over the top of the pancakes for even more peanut flavor and crunchy texture!

Pancakes from scratch tips

  • Serve these pancakes as leftovers or make ahead to make early morning breakfasts even easier. Cover and store in the refrigerator. Reheat just prior to serving in the oven or on the stove. You can also microwave each pancake for 30 to 60 seconds and then finish in the toaster for another minute to crisp the edges.
  • Double the recipe to make a large batch for guests. Or double and then freeze half the batch.

How to freeze pancakes

You can freeze the pancakes. Place the pancakes in a single layer on a piece of parchment paper set on a baking sheet. Place the sheet in the freeze for 30 minutes. Once the pancakes are slightly frozen, place them in a large resealable plastic bag and place in the freezer. Pancakes will keep in the freezer for up to 3 months.

Ingredients 

  • 1 cup all-purpose flour
  • 2 tablespoons baking powder
  • 1 teaspoon cinnamon
  • 1 1/4 cups milk
  • 1/3 cup creamy peanut butter, plus more for drizzling
  • 1 large egg, room temperature
  • 2 tablespoons maple syrup, plus more for drizzling
  • 1 teaspoon pure vanilla extract
  • chopped roasted peanuts, for topping

Instructions

  • Preheat a griddle or large skillet over medium heat (325 degrees F)
  • Whisk flour, baking powder and cinnamon together in a large mixing bowl. In a second large bowl combine milk, peanut butter, egg, maple syrup and vanilla extract. Mix well.
  • Create a well in the center of the dry ingredients and pour the wet ingredients into the middle of it. Whisk together until just combined, being sure not to overmix.
  • Grease skillet or griddle with butter or oil. Laddle batter into 1/4 cup portions onto a hot griddle.   • Serve immediately with chopped peanuts, butter, maple syrup and warm peanut butter (mixed with cinnamon!) for drizzling.

  3. these were so delicious! when i was making them they smelled SO sweet, but once i dug in it was the perfect level of sweetness and the slightly savoury-ness of the peanut butter! thanks for sharing!

    • I added 2 tbsp of cocoa powder , and subbed out a quarter cup of applesauce for the egg, and used almond milk in place of milk and added a tablespoon of apple cider vinegar to the milk to make a buttermilk effect . This tasted like a delicious chocolate peanut butter brownie ! Soo yummy ! Ty for the awesome recipe 🙂
