Comfort food is the best, especially during the fall and winter season! Soup is the best comfort food because it’s warm and hearty. One of our favorite hearty soups is Lasagna Soup. This easy spinach lasagna soup is made with the same flavors as standard lasagna, but it is simmered on the stove with both and a few other fresh ingredients to create a warm and comforting bowl of goodness. Add a scoop of basil and mozzarella ricotta and you have the perfect meal.

How to make spinach lasagna soup

  • Cook lasagna noodles according to package instructions.
  • Heat olive oil, onions and garlic in a large sauce pan or Dutch oven. Add sausage and cook until browned. You can drain the fat from the sausage now, if desired. Add chicken or vegetable broth, diced tomatoes, crushed tomatoes, tomato paste and all of the seasonings. Boil the mixture and then simmer for about 20 minutes.
  • After simmering, add the cooked pasta, fresh spinach and heavy cream. Stir until everything is combined.
  • Serve with ricotta cheese mixture and fresh basil. That’s it!

Tips for making lasagna soup

  • You can use lean ground beef in large chunks instead of sausage.
  • You can omit the spinach, if desired. Although we recommend adding the spinach because it’s a great way to sneak nutrients into the meal.
  • Omit the heavy cream to make this soup lighter.
  • Use a dairy substitute for the cream and cheese, if desired.
  • This soup reheats well and tastes even better as leftovers. Store in a sealed container in the refrigerator for up to 3 days.

Ingredients 

  • 1 tablespoon extra virgin olive oil
  • ½ yellow onion, diced
  • 2 garlic cloves, minced
  • 1 pound hot or sweet Italian sausage, casings removed
  • 4 cups chicken or vegetable broth
  • 14.5 ounce can of diced tomatoes
  • 14.5 oz ounce can of crushed tomatoes
  • 2 tablespoons tomato paste
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon dried parsley
  • 1/4 teaspoon dried rosemary
  • 8 lasagna noodles, broken into 2-inch long pieces
  • 3 ounces baby spinach
  • 1/4 cup heavy cream
  • 8 ounces ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1/3 cup finely shredded parmesan cheese
  • 3 tablespoons freshly chopped basil

Instructions

  • In a large saucepan over medium-high heat, sauté olive oil, onions and garlic until soft, about 1 to 2 minutes. Add sausage and stir to break up. Cook until browned, about 5 minutes. Drain fat from sausage, as desired. Add chicken or vegetable broth, diced tomatoes, crushed tomatoes, tomato paste, basil, oregano, thyme, parsley and rosemary. Bring to a boil, then reduce heat to medium-low, cover and simmer for 20 minutes.
  • Meanwhile, cook lasagna noodles according to the directions on package. Add cooked pasta, spinach and heavy cream to soup. Stir until combined then remove from heat.
  • In a medium bowl, stir together ricotta cheese, mozzarella cheese, parmesan cheese and fresh basil. Serve soup in bowls and top with a scoop of the cheese mixture. Enjoy!

Notes

  • You can use lean ground beef in large chunks instead of sausage.

  3. Unbelievably good!!! This soup is now in our regular rotation of weekly meals; however, instead of broken lasagna noodles, I use Ditalini.  

  4. I am drooling over this!…but unfortunately am dairy-free for the time being while I am breastfeeding. Any suggestions on how to come close without dairy??

  5. We made this tonight for dinner and it was great! Only thing I’d change is figuring out a way to make the cheese mixture a little bit warm.
