Strawberry Spinach and Asparagus Salad

Green is good, but do you know what makes a green salad even better? Strawberries! The beautiful red color and sweet flavor complements the nutrient-rich greens. Strawberry spinach and asparagus salad is one of my favorite ways to enjoy the taste of the season. This easy spring salad is packed with flavor and comes together easily.

Combine fresh spring ingredients to create this easy strawberry salad recipe. Combine all of the ingredients below in a large bowl. You can omit or substitute one of the ingredients if desired. Serve the salad with a simple dressing made with lemon, olive oil and honey.

Strawberry spinach salad ingredients

  • Asparagus is a low calorie, nutrient rich food. Blanch the asparagus for a few minutes for a crisp texture and fresh flavor.
  • Spinach is the leafy base of this salad. Spinach is one of the best choices for greens to pair with strawberries.
  • Strawberries are packed with juicy sweet flavor. We recommend using organic strawberries for the best flavor.
  • Spring onions are also known as scallions or green onions. Both the long green tops and small white bulbs are edible. It adds a mild flavor to this salad.
  • Pea shoots are widely available in the spring. They add additional vitamins and crunch to salad. You can omit them or add a different microgreen, if desired.
  • Almonds add a subtle crunch without adding too much additional flavor. You can also use walnuts or pecans.
  • Goat cheese adds a creamy texture and subtle tart flavor. Omit if making a dairy free salad.

Strawberry Spinach and Asparagus Salad

Strawberry, spinach and asparagus salad is made with fresh spring veggies, strawberries, almonds and goat cheese! An easy, beautiful and flavorful spring salad!

Ingredients 

  • 2 cups fresh asparagus cut into 1-inch pieces
  • 2 heaping cups fresh spinach
  • 2 cups fresh strawberries, sliced in half
  • 1 large spring onion, chopped
  • 1/2 cup pea shoots
  • 2 tablespoons sliced almonds
  • 1 ounce goat cheese, crumbled
  • juice from 1/2 lemon
  • 2 tablespoons olive oil
  • 1 tablespoon honey
  • salt and freshly ground black pepper, to taste

Instructions

  • Bring a large pot of water mixed with a teaspoon of salt to a boil over medium heat. Set aside a bowl of iced water. Add the asparagus to the boiling water and cook for 2 or 3 minutes. Drain the asparagus and immediately add it to the ice water.
  • In a large bowl combine asparagus, spinach, strawberries, onion, pea shoots, almonds and goat cheese. In a small bowl, whisk together the lemon juice, olive oil, honey, salt and pepper. Pour dressing over salad and toss lightly to coat.

  • Omit the goat cheese to make dairy free.
  • Store in the refrigerator for up to 3 days.
  • You can find pea shoots at your local farmers market or grocery store. You can omit them, if desired.
