The idea for this recipe started when I was thinking of creating a flavorful spread to add to a summer vegetable sandwich. I was originally going to add goat cheese and sundried tomatoes to my sandwich, but then thought it might be better if I incorporate the two ingredients into a spread. I am so glad that I did, because this sundried tomato whipped goat cheese is so good, it barely lasted long enough to make it onto a sandwich.

Have you ever tried whipped goat cheese? If not, just imagine goat cheese combined with some of your favorite flavors and whipped until light and fluffy. Ready in less than 10 minutes, whipped goat cheese is also the perfect appetizer.

I seriously want to spread this on everything. Grilled summer squash sandwiches, pita chips and even my morning bagel. Because I am obsessed with pita chips, I just spread this sundried tomato whipped goat cheese over the chips and enjoy the salty flavor and creamy consistency paired with the crunchy chips. I actually used smoked sun dried tomatoes the last time I made this because they were all that I had in my pantry. I really loved the subtle smoky flavor.

Sun Dried Tomato Whipped Goat Cheese

Yield: 2 servings

Ingredients 

  • 11 ounces goat cheese
  • 3 tablespoons whipped cream cheese
  • 1/4 cup sundried tomatoes, chopped
  • salt and pepper

Instructions

  • Combine goat cheese, cream cheese and sundried tomatoes in a food processor. Whip for 1 to 2 minutes until smooth. Taste and season with salt and pepper as desired.
  • Serve immediately with pita chips or store in an airtight container for up to 4 days.
