Feel the heat! We certainly don’t need to go to a tropical island for a dose of warmer weather.  At least here in Florida, July brings plenty of hot weather. I’m always looking for a cool and refreshing breakfast or snack. A tropical fruit yogurt parfait is both healthy and refreshing and the perfect way to start the day or cool down after a grueling run outside.

Tropical Fruit Yogurt Parfait

Ingredients

  • 3 cups Greek yogurt
  • 2 tablespoons honey or agave
  • juice from one lime
  • 1 cup diced mango
  • 2 medium bananas sliced
  • 3/4 cup diced kiwi
  • 1 cup diced pineapple
  • 1/3 cup toasted coconut

Instructions

  1. Combine the yogurt, honey and lime juice in a small bowl. Whisk to blend.

  2. Using four 16-ounce glasses, layer the yogurt-agave mixture, fruit and toasted coconut, diving evenly among the glasses. Serve immediately.
