Who wants to join me for a sandwich party? I rounded up the fillings, made a batch of lemon spinach hummus, sliced a fresh loaf of bread and stocked up on my favorite organicgirl greens. I know it seems simple, but that’s because it is!
One of my favorite local restaurants sells the best sandwiches. They taste exactly like something you could make in your own kitchen which is why I love them so much. I usually order one of two sandwiches, a warm turkey sandwich with guacamole and fresh veggies on rye bread or a veggie hummus sandwich piled high with fresh veggies and hummus. I recreate my own version of these sandwiches at home and today I’m sharing the ultimate veggie hummus sandwich.
Starting with the hummus, I layered all of the ingredients over my favorite bread. For this recipe, I used a seeded bread from the bakery at Whole Foods, but feel free to use any bread. After spreading a thick layer of lemon spinach hummus made with organicgirl baby spinach, I added even more fresh spinach on top. You can never have enough spinach, right? The best thing about this sandwich is that you can choose your own favorite organicgirl greens and fresh ingredients to layer over the bread. I love adding crunchy veggies such as carrots, cucumbers, sprouts and sliced red bell pepper. The combination of ingredients in this recipe creates the ultimate sandwich.

Ultimate Veggie Hummus Sandwich
- 2 slices thick cut bread
- 3 tablespoons lemon spinach hummus
- 1-2 ounces organicgirl baby spinach or other organicgirl salad blend
- 2 tablespoons shredded carrots
- 1/4 small cucumber sliced
- 1/4 small red bell pepper sliced
- 1/2 small tomato sliced
- 2 tablespoons sprouts
- To make the sandwich, spread the hummus onto one slice of bread. Layer the spinach, carrots, cucumber, red bell pepper, tomato and sprouts over the hummus. Top with remaining bread slice and enjoy!
