Watermelon Agave Mint Refresher is made with only three ingredients and is the perfect refreshing drink!
Today I want to introduce you to my favorite summer drink. I first discovered the idea of pureeing watermelon into water at my favorite beach destination in Seaside, Florida. The roadside juice and smoothie bar in Seaside features some of the best smoothies and juices but I always order the watermelon water. It is just pureed watermelon with a small amount of ice. It is the perfect refreshing beach drink. To elevate the flavor, I add agave and fresh mint and create this Watermelon Agave Mint Refresher.
With all of the remodel work on our home and the impending arrival of my little girl, we decided not to plant a spring or summer garden this year. While I miss picking fresh produce from my garden, my herb garden is still filled with fresh herbs that I can use in my recipes. This year my mint flourished so I find any excuse to add it to main dishes, desserts, drinks and more.
I highly recommend growing at least one potted mint plant. It doesn’t really matter what type of mint you grow because most can be used for a variety of recipes, but I love spearmint and mojito mint. Not only are they packed with flavor but they also make a beautiful garnish. Combine the fresh mint leaves with watermelon chunks, agave and a handful of ice and puree in a blender until smooth. Enjoy this refreshing drink poolside or after a workout.

Watermelon Agave Mint Refresher
- 4 cups cubed watermelon
- 1/2 cup ice
- 1 tablespoon agave or honey
- 1/4 cup mint leaves
- In a blender, combine all of the ingredients together and process until smooth.
- You can omit the agave or honey, if desired.
