Double Chocolate Brownies are made with a few simple ingredients and double the chocolate flavor! These naturally gluten free, low carb and low sugar brownies are a sweet treat meant for sharing.
Preheat the oven to 325°F. Coat an 8x8 inch pan with olive oil spray. Add the chocolate, butter and coconut milk to a large bowl. Microwave on high power for approximately 2 minutes until the chocolate is melted. Whisk well and set aside to cool.
Add the stevia, almond flour, 2 tablespoons cocoa powder and baking powder to a large bowl. Whisk to combine. Whisk in the eggs and the cooled chocolate. Transfer the mixture to the prepared baking pan and smooth the top with a spatula. Bake for 20 to 25 minutes, or until the edges are firm but the center is soft. Cool completely in the pan and then slice into small squares. Sprinkle with the remaining cocoa powder. Store in an airtight container in the fridge for up to 5 days.
