1medium cucumberpeeled, seeded and diced into ½ inch chunks
1pintgrape tomatoesquartered
1teaspoonsalt
3tablespoonsolive oil
3tablespoonsred wine vinegar
1medium garlic cloveminced
1can chickpeasdrained and rinsed
½cupchopped pitted kalamata olives
¼cupdiced red onion
½cupchopped fresh parsley
1romaine heartcut into ½ inch pieces
4ouncesfeta cheesecrumbled
dash ground black pepper
Instructions
Combine cucumber, tomatoes, and salt in colander set over a bowl. Let stand 15 minutes.
Whisk oil, vinegar, and garlic together in large bowl. Add drained cucumber and tomatoes, chickpeas, olives, onion, and parsley; toss and let stand at room temperature for 5 minutes to allow flavors to blend.
Add romaine and feta; toss to combine. Season with pepper and serve.
