Ingredients

For the muffins:

  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 3 bananas mashed
  • 3/4 cup sugar
  • 1 egg lightly beaten
  • 1/2 teaspoon ground cinnamon
  • 1/3 cup butter melted
  • 1/2 cup semi-sweet chocolate chips

For the topping:

  • 1/3 cup packed brown sugar
  • 2 tablespoons all-purpose flour
  • 1/8 teaspoon ground cinnamon
  • 1 tablespoon butter

Instructions

  1. Preheat oven to 375 degrees F. Line a muffin tin with 10 paper liners.
  2. To make the muffins, in a large bowl, combine flour, baking soda, baking powder and salt. Mix and set aside. In another bowl, beat together bananas, sugar, egg, cinnamon and melted butter. Stir the banana mixture into the flour mixture just until moistened. Fold in the chocolate chips. Spoon batter into muffin cups.
  3. To make the topping, in a small bowl, combine brown sugar, flour and cinnamon. Stir to mix. Cut in butter until mixture resembles coarse cornmeal. Sprinkle topping over muffins.
  4. Bake 18 to 20 minutes, until a toothpick inserted into center of a muffin comes out clean.

Notes

  • You can omit the chocolate chips, if desired. 
  • Store in a container at room temperature for up to 3 days or freeze, if desired.
