Chocolate Covered Cherry Bites

Chocolate covered cherry bites are a quick and easy no-bake treat! They are paleo and vegan friendly too!

Ingredients

  • 1/2 cup almonds
  • 1/2 cup cashews
  • 1 cup Medjool dates* pitted
  • 3/4 cup dried cherries
  • 1 tablespoon cocoa powder
  • 1/4 cup semi sweet chocolate chips

Instructions

  • Add the almonds and cashews to the bowl of a food processor. Pulse until nuts are finely chopped (but do not pulse too long, you do not want the nuts to turn into a paste). Add the dates, cherries and cocoa powder. Pulse until the dates are finely chopped and the mixture starts to clump. Shape the mixture into 1 1/2 inch balls. If the mixture feels too dry, work it together with your hands. Melt chocolate in a heat proof bowl set over a pot of simmering water. Drizzle melted chocolate over bars and let set. Store in an airtight container in the refrigerator.

Notes

If Medjool dates are not available, any other pitted date will work. Use vegan or paleo-friendly chocolate chips, as desired.
