Strawberry Chia Seed Jam

Strawberry Chia Seed Jam is perfect for mixing into oatmeal, parfaits or spreading over the top of a slice of bread! So much strawberry flavor and healthy chia seeds packed into this jam!

Ingredients

  • 16 ounces fresh or frozen strawberries
  • 2-3 tablespoons honey*
  • 2 tablespoons chia seeds
  • squirt of freshly squeezed lemon juice

Instructions

  • In a medium saucepan over medium heat, bring berries to a low boil, stirring frequently. Reduce heat to low and simmer until the berries soften, about 5 to 7 minutes. Lightly mash berries with a potato masher or fork.
  • Stir in the honey, chia seeds and lemon juice. Cook jam on low heat until it thickens, about 5 minutes. Remove from heat and let cool to room temperature. Store in a glass jar or air-tight container in the refrigerator for up to 2 weeks.

Notes

*Add more or less honey depending on how sweet you like it. You may also substitute the honey with maple syrup.
**You can use fresh or frozen strawberries. I use one (10 ounce) package of frozen berries, with the remainder being fresh berries.
