Peach Caprese Salad

Add seasonal flavors to a simple caprese salad with slices of fresh peaches. Top with a drizzle of balsamic dressing, serve with your favorite quiche or other dish and you have a fresh and easy meal that makes summer entertaining easy!

Ingredients

  • 1 cup balsamic vinegar
  • 2 ounces baby arugula
  • 8 - 10 basil leaves coarsely chopped
  • 1 - 2 teaspoons extra virgin olive oil
  • 1 teaspoon lemon juice
  • 4 ounces fresh mozzarella
  • 1 cup cherry tomatoes
  • 1 large peach halved, pitted and sliced
  • salt and pepper

Instructions

  • To prepare the balsamic reduction, in a small saucepan over medium-high heat, bring balsamic vinegar to a simmer. Reduce heat to medium-low, and simmer until the vinegar has reduced to 1/4 cup, about 20 minutes. Set aside and let cool.
  • In a large bowl, toss arugula, basil, olive oil, and lemon juice. Divide among serving plates. Top with mozzarella, tomatoes and peaches. Drizzle with balsamic vinegar. Season with salt and pepper and serve.
