Banana Bars with Cream Cheese Frosting

Ingredients

For the Banana Bars

  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/8 teaspoon kosher salt
  • 1/2 cup unsalted butter softened
  • 1 cup granulated sugar
  • 2 large eggs room temperature
  • 1/2 cup vanilla Greek yogurt
  • 1 teaspoon vanilla extract
  • 1 1/2 cups mashed ripe bananas (about 3 medium bananas)

For the Cream Cheese Frosting

  • 8 ounces cream cheese softened, (regular or low fat)
  • 1/2 cup butter softened
  • 2-3 cups powdered sugar
  • 1 1/2 teaspoons vanilla extract
  • 1/2 teaspoon ground cinnamon optional
  • 1 tablespoon heavy cream

Instructions

Make the Banana Bars

  • Preheat the oven to 350 degrees F. Lightly spray a 15-inch jelly rollpan with baking spray and set aside.
  • In a small mixing bowl, whisk together flour, baking soda, and salt; set aside.
  • In a separate large bowl, cream butter and sugar until smooth, 2 to 3minutes. Beat in the eggs one at a time, mixing well between each. Add yogurt and vanilla, stirring until combined.
  • Add the dry ingredients to the wet ingredients, mixing until blended.
  • Fold in the mashed banana until just combined.
  • Transfer to the prepared baking pan. Bake for 20 to 25 minutes, until a toothpick inserted in the center comes out clean. Allow the bars to cool in the pan on a wire rack.

Make the Cream Cheese Frosting

  • In a mixing bowl, beat cream cheese and butter until well combined and fluffy, about 3 minutes.
  • Add powdered sugar, vanilla, and cinnamon (if using), blending until smooth. Add heavy cream and beat another 2 minutes until fluffy.
  • Frost bars, slice into squares, and serve.

Notes

You can also cut the bars into 16 servings instead of 12.
