Lemon Spinach Hummus, spinach, carrots, cucumber, tomato, sprouts and red peppers are piled high on top of freshly baked bread to create the ultimate veggie hummus sandwich!

Ingredients

  • 2 slices thick cut bread
  • 3 tablespoons lemon spinach hummus
  • 1-2 ounces baby spinach or other salad blend
  • 2 tablespoons shredded carrots
  • 1/4 small cucumber sliced
  • 1/4 small red bell pepper sliced
  • 1/2 small tomato sliced
  • 2 tablespoons sprouts

Instructions

  • To make the sandwich, spread the hummus onto one slice of bread. Layer the spinach, carrots, cucumber, red bell pepper, tomato and sprouts over the hummus. Top with remaining bread slice and enjoy!
