Ingredients

  • 2 Sockeye Salmon filets
  • 1/2 cup about 6 fresh strawberries
  • 1 tablespoon + 1 teaspoon honey
  • 1 tablespoon olive oil
  • juice from half of a lemon + lemon slices for garnish
  • 1/8 teaspoon freshly ground black pepper

Instructions

  • Preheat oven to 425 degrees F. Line a baking sheet with aluminum foil, then coat with non-stick cooking spray.
  • Puree strawberries in a food processor. In a medium bowl, combine strawberry puree, honey, olive oil, lemon juice and freshly ground black pepper. Add salmon to bowl and marinate in fridge for 15 minutes.
  • Lay salmon on lined baking sheet, brush with extra marinade and top with slice of lemon, if desired. Bake for 12 to 15 minutes or until just cooked through and flaky.
