Ingredients

For the salad:

  • 4 ounces spinach
  • 1/2 cup cooked quinoa I used tri-color
  • 1 cup chopped strawberries
  • 3/4 cup chopped mango
  • 1/2 cup chopped papaya
  • 1/2 cup chopped nectarine
  • 1/2 cup macadamia nuts

For the strawberry-ginger dressing:

  • 1/2 cup strawberries
  • 1/4 cup olive oil
  • 1/2 piece of ginger peeled and chopped
  • 1 tablespoon raw apple cider vinegar
  • 1 tablespoon honey

Instructions

  • Add all of the ingredients for the dressing (strawberries through honey) to a food processor. Pulse until well blended.
  • In a large bowl, add the spinach, quinoa, strawberries, mango, papaya, nectarine and macadamia nuts. Stir to combine. Divide salad evenly between two or three bowls. Top with strawberry-ginger dressing and serve.
