Avocado Toast Three Ways (Each recipe is below)

Make your day a little greener with Avocado Toast Three Ways including Strawberry Balsamic Avocado Toast, Smashed Avocado Toast with Egg and Sweet Pea, and Whipped Goat Cheese and Cucumber Avocado Toast!

Ingredients

For the Strawberry Balsamic Avocado Toast:

  • 2 slices of your favorite bread toasted
  • 1 ripe avocado halved and pit removed
  • 2 ounces organicgirl baby spinach and arugula
  • 2 large strawberries sliced
  • 2 teaspoons sliced almonds
  • salt and pepper
  • balsamic vinegar or glaze for serving

For the Smashed Avocado Toast with Egg:

  • 2 slices of your favorite bread toasted
  • 1 ripe avocado halved and pit removed
  • 2 ounces organicgirl Sweet Pea
  • 1 boiled egg halved
  • salt and pepper

For the Whipped Goat Cheese and Cucumber Avocado Toast:

  • 2 slices of your favorite bread toasted
  • 3 tablespoons super green whipped goat cheese
  • 2 ounces organicgirl super spinach
  • 1 ripe avocado halved and pit removed
  • 1/2 medium cucumber cut into slices
  • red pepper flakes for serving

Instructions

  • To make the Strawberry Balsamic Avocado Toast, scoop out the avocado flesh into a small bowl. Add a small amount of salt and pepper, to taste. Mash with a fork to combine. Spread the mashed avocado evenly onto the toasted bread slices. Divide the remaining ingredients between each of the toasted bread slices, starting with the baby spinach and arugula, strawberries and then almonds. Serve with balsamic vinegar or glaze, as desired.
  • To make the Smashed Avocado Toast with Egg, scoop out the avocado flesh into a small bowl. Add a small amount of salt and pepper, to taste. Mash with a fork to combine. Spread the mashed avocado evenly onto the toasted bread slices. Divide the remaining ingredients between each of the toasted bread slices, starting with the Sweet Pea blend and ending with the boiled egg. Serve with an additional sprinkle of pepper, as desired.
  • To make the Whipped Goat Cheese and Cucumber Avocado Toast, cut the avocado flesh into small slices. Divide the whipped goat cheese between the two slices of toasted bread. Top each with super spinach blend, sliced avocado, and cucumber. Serve with red pepper flakes, as desired.
