Little tea cookies made with fresh lemon flavor!

In a small bowl, whisk flour, baking powder and salt; set aside.

In the bowl of a stand mixer, cream the butter and sugar. Mix in egg yolk, lemon juice, zest, and vanilla until incorporated. Add the dry ingredients and mix just until combined.

Roll the dough into balls and place on the prepared baking sheets. Bake.

Allow to cool. While the cookies are still warm, roll them in confectioners' sugar and let them cool completely.
