Bacon Goat Cheese Balls

- 4 ounces goat cheese softened
- 4 ounces cream cheese softened
- 8 slices cooked bacon crumbled
- ½ cup pecans or walnuts toasted, finely chopped
- ½ cup fresh parsley minced
- Pretzel sticks for serving
- Crackers for serving
Line a baking sheet with wax paper or parchment and set aside.
Place the goat cheese and cream cheese in a mixing bowl. Add about one quarter of the crumbled bacon, 2 tablespoons of nuts, 2 tablespoons parsley. Use a hand mixer to mix on low, until well combined.
Stir the remaining bacon, nuts, and parsley in a shallow bowl; set aside.
Using a cookie scoop, roll the mixture into 1-inch balls. Roll the balls in the bacon mixture to evenly coat the outside. Set the balls on the prepared baking sheet. Chill until ready to serve.
When ready to serve, push a pretzel stick into each ball, then set the balls on top of your favorite crackers.
