Ingredients

  • 4 ounces goat cheese softened
  • 4 ounces cream cheese softened
  • 8 slices cooked bacon crumbled
  • ½ cup pecans or walnuts toasted, finely chopped
  • ½ cup fresh parsley minced
  • Pretzel sticks for serving
  • Crackers for serving

Instructions

  • Line a baking sheet with wax paper or parchment and set aside.
  • Place the goat cheese and cream cheese in a mixing bowl. Add about one quarter of the crumbled bacon, 2 tablespoons of nuts, 2 tablespoons parsley. Use a hand mixer to mix on low, until well combined.
  • Stir the remaining bacon, nuts, and parsley in a shallow bowl; set aside.
  • Using a cookie scoop, roll the mixture into 1-inch balls. Roll the balls in the bacon mixture to evenly coat the outside. Set the balls on the prepared baking sheet. Chill until ready to serve.
  • When ready to serve, push a pretzel stick into each ball, then set the balls on top of your favorite crackers.

Notes

  • Use fully softened cheeses for a smooth mixture.
  • Chill briefly if the mixture is too soft to roll.
  • Make up to 24 hours ahead and refrigerate.
