Ingredients
For the Salad
115-ounce cangarbanzo beansdrained and rinsed
115-ounce cancannellini beansdrained and rinsed
115-ounce candark red kidney beansdrained and rinsed
1cupcherry tomatoeshalved
½cupred oniondiced
½cuppitted Castelvetrano oliveshalved
½cuproasted red pepperschopped
½cuppepperoncinisliced
½cupParmesan cheesefreshly shredded or shaved , plus more for garnish
¼cuploosely packed basil leaveschopped
2tablespoonsfresh parsleyfinely chopped, plus more for garnish
Add the drained and rinsed garbanzo beans, cannellini beans, and kidney beans to a large mixing bowl.
Add the tomatoes, red onion, olives, roasted red peppers, pepperoncini, Parmesan, basil, and parsley. Gently stir to combine.
Add the red wine vinegar, olive oil, Dijon mustard, oregano, garlic powder, salt, and black pepper to a mason jar. Secure the lid and shake until blended.
Pour the vinaigrette over the salad and gently toss to coat. Taste and adjust the seasoning as needed.
Cover and refrigerate for at least 30 minutes to allow the flavors to meld.
Stir gently before serving and garnish with additional parsley and Parmesan, if desired.
Notes
Drain the beans and jarred vegetables thoroughly so they do not dilute the vinaigrette.
Store leftovers in an airtight container in the refrigerator for up to 4 days.
Freezing is not recommended because the vegetables, herbs, and cheese will lose their texture.
