- 6-8 fresh mint leaves plus more for garnish
- 4 fresh strawberries hulled and sliced
- 1 ounce fresh lime juice
- ¾ ounce simple syrup
- 1 ½ ounces light rum
- 1 ounce club soda
- Ice
Optional Garnishes
- Lime wedges
- Extra sliced strawberries
- Mint sprigs
Remove the mint leaves from the stems and gently clap them between your hands to help release their natural oils and aroma.
Add the sliced strawberries, mint leaves, lime juice, and simple syrup to a cocktail shaker or sturdy glass.
Muddle gently until the strawberries are juicy and mostly broken down while the mint becomes fragrant. Avoid over-muddling the mint to prevent bitterness.
Add the light rum and a handful of ice to the shaker. Shake for about 10–15 seconds until well chilled.
Fill a highball glass with fresh ice and strain the cocktail mixture into the glass.
Top with club soda and gently stir to combine.
Garnish with extra mint, sliced strawberries, and a lime wedge if desired, then serve immediately.
- Fresh lime juice provides the brightest flavor.
- Gently muddle the mint to avoid bitterness.
- Adjust the simple syrup based on the sweetness of your strawberries.
- Crushed ice creates a more traditional mojito texture.
- For a mocktail, omit the rum and add extra club soda or sparkling water.
- Serve immediately for the best flavor and bubbles.
