Ingredients

  • 6-8 fresh mint leaves plus more for garnish
  • 4 fresh strawberries hulled and sliced
  • 1 ounce fresh lime juice
  • ¾ ounce simple syrup
  • 1 ½ ounces light rum
  • 1 ounce club soda
  • Ice

Instructions

  • Remove the mint leaves from the stems and gently clap them between your hands to help release their natural oils and aroma.
  • Add the sliced strawberries, mint leaves, lime juice, and simple syrup to a cocktail shaker or sturdy glass.
  • Muddle gently until the strawberries are juicy and mostly broken down while the mint becomes fragrant. Avoid over-muddling the mint to prevent bitterness.
  • Add the light rum and a handful of ice to the shaker. Shake for about 10–15 seconds until well chilled.
  • Fill a highball glass with fresh ice and strain the cocktail mixture into the glass.
  • Top with club soda and gently stir to combine.
  • Garnish with extra mint, sliced strawberries, and a lime wedge if desired, then serve immediately.
