Combine the lime juice, avocado oil, honey, chili powder, smoked paprika, cumin, garlic powder, oregano, salt, and black pepper in a mixing bowl or resealable bag. Add the chicken and turn to coat. Refrigerate for 30 minutes to 3 hours.
Preheat a grill to medium or medium-high heat. Grill the corn, turning occasionally, until tender and charred in spots, about 10 to 12 minutes. Let it cool slightly.
Remove the chicken from the marinade and let the excess drip off. Grill for about 6 to 8 minutes per side, turning as needed, until browned and the thickest part reaches 165°F. Rest for 5 minutes, then slice or chop.
Carefully cut the corn kernels from the cobs.
Combine the corn, sour cream or crema, mayonnaise, Cotija, cilantro, scallions, and chili powder. Season with salt, pepper, and lime juice to taste.
Divide the rice among four bowls. Top with the chicken and creamy charred street corn.
Add avocado, pickled onions, black beans, crema, Cotija, cilantro, chili powder or Tajín, and lime wedges as desired.
