Combine the flours, oats, baking powder, and salt, then set aside. Meanwhile, mash half of a banana. Slice the remaining bananas and set aside.

Add the eggs, vanilla, melted butter, and milk to the mashed banana, then whisk. Pour the wet ingredients into the dry ingredients and stir. Let the mixture sit.

Grease a hot skillet with butter or ghee. Pour some batter and top with some banana slices. Flip the pancakes and cook on the other side.
