California BLT Pizza
California BLT Pizza is a fresh twist on classic BLT pizza topped with chicken, bacon, mozzarella, tomatoes, avocado and peppery arugula. Inspired by the California Club Pizza from California Pizza Kitchen.

- 1 ball pizza dough
- 2 tablespoons olive oil
- 1 cooked chicken breast chopped into bite-sized pieces
- 4 slices of bacon cooked and cut into bite-sized pieces
- 1 cup shredded mozzarella cheese
- 1 ½ cups arugula
- 1 tablespoon mayonnaise or more to taste
- 1 tomato sliced
- 1 avocado peeled and cut into 8 slices
Preheat the oven to 425 degrees F. Place a pizza stone in the oven while it preheats.
Roll the pizza dough into a 12 to 14-inch round. Brush the dough with olive oil, then top evenly with the chicken, bacon and mozzarella cheese.
Transfer the pizza to the hot pizza stone and bake for 10 to 12 minutes, until the cheese is melted and bubbling and the crust is lightly golden.
While the pizza bakes, toss the arugula with the mayonnaise. Remove the pizza from the oven and top with the tomatoes, arugula mixture and avocado slices. Slice and serve immediately.
- Dough Tip: Fresh grocery store pizza dough works great for this recipe. I often use the pizza dough balls from Whole Foods.
- Use cooked chicken. Rotisserie chicken, grilled chicken or leftover chicken all work well.
- Keep the toppings fresh. Add the arugula, tomatoes and avocado after baking for the best texture and flavor.
- Thin crust works best. For a crisp, restaurant-style pizza, use about half of a standard ball of pizza dough.
- Storage: Store leftovers in the refrigerator for up to 3 days. The fresh toppings are best enjoyed the day the pizza is made.
