2mediumzucchini(or 3 small)
2teaspoonsextra virgin olive oil
1/2teaspoondried thyme
1/4teaspoonKosher salt
Black pepperto taste
Pinch red pepper flakes
Lemon wedgesfor serving
Grated Parmesan cheesefor serving (optional)
Instructions
Preheat the air fryer to 400 degrees F for 5 minutes.
Meanwhile, trim the stem and base ends off of the zucchini, then cut it in half lengthwise. Cut it into 3/4-inch pieces and place in a medium bowl.
Drizzle the olive oil over the zucchini. Season with thyme, salt and peppers and toss to coat.
Place the zucchini in a single layer in the air fryer basket and cook for 5 to 8 minutes until tender, tossing once during the cook time.
Serve warm with lemon wedges and Parmesan, if desired.
Notes
Storing: Zucchini cooked in the air fryer is best served immediately. However, if you have leftovers, they can be stored in an airtight container in the refrigerator for up to 48 hours. Freezing is not recommended.Reheating: To reheat, add the air fried zucchini back to the air fryer and cook on 400°F for about 60-90 seconds or until warmed through.
