Grilled Peach Crostini with Goat Cheese and Prosciutto

Crisp grilled bread is layered with creamy goat cheese, arugula, prosciutto and juicy grilled peaches, then finished with a sweet and tangy balsamic reduction.

Ingredients

  • 1 cup balsamic vinegar
  • 1 small French baguette or ciabatta loaf sliced into 1/3" thick
  • 1/3 cup olive oil
  • 2 large peaches halved and pitted
  • 4 ounces goat cheese softened
  • 1.5 ounces organicgirl baby arugula
  • 3 ounces thinly sliced prosciutto

Instructions

  • Add the balsamic vinegar to a small saucepan and bring to a gentle simmer over medium-high heat. Reduce the heat to medium-low and simmer for about 20 minutes, or until reduced to 1/4 cup. Remove from the heat and let cool.
  • Preheat the grill to medium heat. Brush both sides of the bread slices and the cut sides of the peaches with olive oil.
  • Grill the bread for about 2 minutes per side, until golden and crisp. Grill the peaches for about 3 minutes per side, until lightly marked and slightly tender.
  • Remove the bread and peaches from the grill. Let the peaches cool slightly, then cut them into thin slices.
  • Spread goat cheese over each slice of bread. Top with arugula, prosciutto and grilled peaches. Drizzle with the balsamic reduction and additional olive oil. Serve immediately.

Notes

  • Choose peaches that are ripe but still firm so they hold their shape on the grill.
  • Watch the bread closely because thin slices can toast quickly.
  • Remove the balsamic reduction from the heat while it is still pourable. It will thicken as it cools.
  • Tear or cut the prosciutto into smaller pieces to make the crostini easier to eat.
  • Bottled balsamic glaze can be substituted for the homemade reduction.
  • Prepare the toppings ahead, but assemble the crostini just before serving so the bread stays crisp.
  • A grill pan can be used in place of an outdoor grill.
