I’m here to make your day. Or maybe just make your dinner extra special because I know that you love one pot meals. After all, my one pot lemon chicken pasta with baby kale is heading towards being my most popular recipe for 2015. Who can resist fresh ingredients, creamy cheesy goodness and perfectly cooked pasta made in one pot?
Each week I experiment with new one pot recipes and I am happy to report that my most recent recipe idea was a huge success! One Pot Cajun Chicken Pasta includes everything that you love about cajun chicken pasta in one dish. Yes, even the pasta cooks in the pan. Trust me, it works. Not only does it work, but it yields the most creamy pasta dish combined with the Parmesan cheese and cream cheese. The freshly sliced peppers add a delicious serving of vegetables.
I started with the exact same base recipe that I use for most of my one pot meals and added cajun seasoning, red peppers and extra parmesan cheese. Just prior to serving, I add chopped fresh parsley to add a little green color to the meal. I usually try to sneak greens into all of my one pot meals so feel free to add your favorite greens, such as kale or spinach. Simply add the greens when you add the peppers.
Go ahead, enjoy this meal any night of the week. Don’t forget to save some of the pasta for leftovers too. This one pot meal tastes as as good, if not even better, as leftovers! 1 small red bell pepper, seeds removed and sliced into thin strips
1 small yellow bell pepper, seeds removed and sliced into thin strips
4 ounces cream cheese
1/2 cup shredded from the block parmesan cheese
fresh chopped parsley, for garnish
Season chicken with one teaspoon Cajun seasoning; set aside.
In a 12" pan or skillet, heat olive oil over medium heat. Add onions and stir until soft, about 3 minutes. Add chicken to pan and cook until brown on both sides. Stir in garlic and cook one additional minute. Add uncooked pasta, chicken broth, water, sliced peppers and remaining Cajun seasoning (use one teaspoon if you want mild Cajun flavor or the remaining two teaspoons if you want full Cajun flavor). Stir then bring to a boil. Reduce heat to low, cover and simmer for 22 minutes. Uncover and cook until almost all of the liquid is absorbed, about 5 additional minutes. Remove from heat, stir in cream cheese and Parmesan cheese. Stir until cheese is melted. Garnish with fresh parsley and serve immediately.
*You can make your own homemade Cajun seasoning by combining the following ingredients; 1 teaspoon paprika, 1 teaspoon garlic powder, 1/2 teaspoon onion powder, ½ teaspoon oregano, ½ teaspoon cayenne pepper, ½ teaspoon salt, ¼ teaspoon black pepper, 1/8 teaspoon red chili flakes.
