I added another barre class to my schedule on Saturday mornings. So a few weekends ago I decided to try a new studio that just opened. The class was a little different that the barre class I am used to taking, which I love because that means it works different areas of the body. But I swear that I was still feeling the effects on Wednesday off that week. I have never done so many relevés in my life in one class and I was sore. You know the kind of soreness where it hurts so good. I’m really glad that I added a class on Saturday mornings because it is the perfect way to start the weekend.

My favorite post-workout snack is this pomegranate yogurt parfait with granola clusters and dark chocolate chunks. Best of all, I used the freshest, juiciest pomegranate ever. The past few that I’ve purchased from the store have been the best pomegranates I’ve ever tasted. They are full of antioxidants and juicy intense flavor. On a related note, my new favorite tea is pomegranate green tea. I just purchased the Bigelow brand and it adds a slightly tart flavor to my green tea which I love.

Pomegranate Yogurt Parfait - start your day with this parfait!  

Pomegranate Yogurt Parfait

Yield: 4 servings

Pomegranate Yogurt Parfait

Ingredients

  • 3 cups Greek yogurt
  • 1/4 cup honey
  • 1 1/2 cups granola clusters
  • 1/2 cup pomegranate seeds
  • chocolate chips, as desired

Instructions

  1. Combine the yogurt and the honey in a small bowl. Whisk to blend thoroughly.
  2. Using four 16-ounce glasses, spoon 1/3 cup of the yogurt-honey mixture into each glass. Top with 1 tablespoon of the pomegranate seeds. Then spoon 3 tablespoons of the granola on top of the pomegranate seeds. Repeat the layering process again with the remaining yogurt, pomegranate and granola. Add chocolate chips, as desired. Serve immediately.

    I’ve never taken classes at the Barre method, but I have at Dailey Method, which I’m told is similar. It’s such an incredible workout! I would love to have one of these parfaits waiting for me afterward…it’s the perfect post workout meal!

  3. I really want to try a barre class! My gym doesn’t offer them, but a new studio opened up just 5 minutes from my house. Wish it wasn’t so expensive. Maybe I should try looking for a DVD? This granola and yogurt looks delicious! My sister has a pomegranate tree, and they’ve all been delicious this year. Must have been good weather for pomegranate growing : )

      I agree, they are really expensive! But my studio runs a special a few times a year so I stock up on class passes then. Otherwise, it is way too expensive. I’ve heard that there are some really good DVD’s though.

    I’ve been reallllly wanting to try a barre class – they just opened a new studio by me … I just wish it weren’t so pricey! We’ll see … I may end up just doing it! And I agree – yogurt with granola is an awesome post-workout snack. This parfait sounds amazing! Love the pomegranate seeds – they are always so pretty!

      I LOVE barre. I think trying a class is definitely worth it. But I agree, they are very expensive. I try to buy class passes when the studio runs specials so I never pay full price.

  6. Ooh barre class! I’ve never tried it myself but heard it’s a lot of fun ;) . I love yogurt parfaits and love making them at home. Isn’t it so ridiculous how much people are selling them for?!       Yeah, I love mixing up my yogurt parfait flavors depending on the season! And I never buy them premade because they are so much cheaper and fresher if you make them yourself :) Have a great week, Min!

  7. I am in love with yogurt parfaits. And pomegranates. And your granola clusters. This is, by far, the most perfect post for me!!
    I’ve never tried a barre class. Our gym offers them, and we also have a studio in town. I’m super not flexible, and I keep seeing pictures of people with their leg up a wall doing a split. That makes me sore just looking at it. I’ve often wanted to try one, but am too chicken! I’ll stick with yoga and running! :)

      Gretchen, you definitely do not have to be flexible to take barre. At least you won’t see my leg up a wall doing a split :) Seriously though, most of class is working on building muscles. I have discovered many muscles I never knew existed thanks to barre. Out of my pilates, yoga and barre classes, I think the barre is the one where you need the least coordination and flexibility. You should try it at least once, especially if your gym offers it.

  10. I have never heard of the type of class you are referring to but I oh so want to try it! I haven’t had a good workout that made me sore in a while. I always get sore the first time I run after not running for a while and I love it. But since I have been mostly consistent with the running, I have not been sore. I need to get on the ball and start doing some other exercises too!

    I love this simple yogurt recipe. And your presentation is great – I love the little jars. So cute.

      Soreness is a good thing :) There are a few different types of barre classes and they are all unique which is why I love them. I try to rotate my classes so I never get bored. Enjoy your week too, Julie!

  16. Sounds like you’re having a good time in your class, Ashley! I wish we had something like that in our town… let alone our county. We don’t even have a gym. (Which I don’t like.) I just have my pink retro bike. (hehe)

      Wow, no gym at all? Right now I rotate between three gyms on a weekly basis – my regular gym, a pilates studio and a barre studio. And they are all within 5 minutes of my house :) And a parfait party sounds right up my alley!

  23. Barre classes sound like such a great workout. I’d love to try taking a class someday, however I’m not sure if they even offer it in the small city I’m from. I’ll have to look into it. This parfait looks so good. I absolutely love pomegranate but never thought to add it in with some yogurt and granola. :)
