Now that I have a little one, it is even more important for me to make easy yet impressive meals packed with the freshest flavors. Watermelon Berry Salad comes together in little time and is a fun salad to serve for dinner parties, holiday celebrations or summer picnics.

For this salad, I used one of my favorite organicgirl salad blends with baby spinach and arugula. Chunks of watermelon, strawberries and blueberries are layered over the fresh greens. I also serve this salad with one of my favorite types of cheese. You could use everything from feta or goat cheese to cheddar or brie. The options are endless so choose your favorite cheese and enjoy the salad with homemade strawberry mint dressing.

It adds a fun element to a beautiful salad and is perfect for Memorial Day, the Fourth of July or Labor Day celebrations. Watermelon Berry Salad is a refreshing summer salad made with fresh watermelon, strawberries, blueberries, greens and homemade strawberry dressing!

Ingredients

For the strawberry-mint dressing:

  • 2 cups fresh strawberries
  • 1/4 cup fresh mint
  • 1/4 cup honey
  • 2 tablespoons fresh lemon juice

For the salad:

  • 1 1/2 cups watermelon chunks
  • 1 cup chopped strawberries
  • 1/2 cup blueberries
  • 6 ounces cheese cubed
  • 5 ounces organicgirl baby spinach & arugula

Instructions

  1. Add all of the ingredients for the dressing to a food processor. Pulse until well blended. To assemble the salad, layer the watermelon, strawberries, blueberries and cheese over the greens. Drizzle with dressing and serve immediately.
