This salad is always a favorite. It’s bold, beautiful and so easy to make. It combines some of the best winter fruit with a fresh homemade dressing. Slice a mixture of fresh citrus, whisk together a simple vinaigrette and enjoy a delicious salad ready in less than 15 minutes!

Ingredients You Need

  • Citrus: Use a combination of colors and flavors. Clementines, Minneola oranges, Cara Cara oranges, tangelos, grapefruit and blood oranges are great choices.
  • Fresh Mint: Adds a beautiful garnish and fresh flavor.
  • Pomegranate Arils: These add fresh flavor and crunch to the salad. You can omit, if desired, or substitute with sliced almonds or another type of nut.
  • Pomegranate Juice: Pairs well with the winter citrus. Use fresh or bottled juice.
  • Olive Oil: You can substitute with avocado oil.
  • Red Wine Vinegar: You can substitute with apple cider vinegar or balsamic vinegar.
  • Honey: This slightly sweetens the dressing, but you can omit if desired.

Steps to Make Citrus Salad

Slicing Citrus

You can slice the citrus into wheels or wedges. First, cut off the peel on the citrus, removing as much of the pith as possible. The best way to do this is to use a knife to cut off the top and bottom of the peel. Then, cut off the peel top to bottom, working your way around the edges until all of the peel is gone.

Pomegranate Dressing

This recipe uses a simple pomegranate dressing. Since citrus salad is made with winter citrus, a pomegranate dressing is the perfect complement.

To make the dressing, whisk together olive oil, fresh pomegranate juice, red wine vinegar, honey and a splash of lemon juice. You can substitute the pomegranate juice for fresh orange juice if you want to add more citrus flavor.

Other Topping Ideas

While this salad tastes great with a few simple ingredients, you can add some of your other favorite salad toppings if desired.

  • Nuts: sliced almonds, walnuts, pecans or pine nuts
  • Onion: Top with thinly sliced red onion.
  • Avocado: Sliced avocado is another great addition to this salad.
  • Greens: Serve the salad over a fresh bed of greens such as kale or mixed greens.
  • Cheese: Add a crumble of goat cheese or some freshly shaved Parmesan.

Ingredients 

  • 2 large oranges
  • 1 large pink grapefruit
  • 1 medium blood orange
  • Kosher salt

For the Vinaigrette:

  • 3 tablespoons extra virgin olive oil
  • 3 tablespoons pomegranate juice
  • 1 tablespoon red wine vinegar
  • 1/2 teaspoon honey
  • Splash lemon juice, to taste
  • Fresh mint leaves, for garnish
  • Pomegranate arils, for garnish

Instructions 

  • Peel citrus, removing as much pith as possible, and slice into wheels. Remove any pits, layer fruit on a serving dish, sprinkle with a bit of salt to taste.
  • Whisk together olive oil, pomegranate juice, vinegar, honey, and lemon juice until well combined; taste, adjust seasoning as needed and drizzle over salad.
  • Garnish salad with pomegranate seeds and fresh mint.
