Harvest Buddha Bowl with Lemon Tahini Dressing is made with fresh spiralized beet and sweet potato noodles, spiralized apple, chickpeas, spinach and more! Pack this bowl for lunch to fuel up for the day.
After having my baby last summer, loosing the last remaining 5 pounds of weight I gained hasn’t been easy. I increased the amount of times per week I’m doing Pure Barre to tone up a few areas that need help and I’m eating even better than I usually do. This means a lot of greens, raw vegetables, water and maybe even some chocolate too. Without sacrificing on flavor, I’m enjoying my favorite skillet meals, salads, and bowls, including this Harvest Buddha Bowl with Lemon Tahini Dressing.
For this recipe, I used my favorite KitchenAid attachment, the Spiralizer Plus. Not only can I spiralize the sweet potato and beets for this recipe, I can also slice the granny smith apple. The bowl comes together in relatively little time and creates a simple meal that is packed with protein and flavor. Feel free to experiment with your favorite flavors or ingredients to create a meal that you will want to eat again and again.
This Harvest Buddha Bowl with Lemon Tahini Dressing was originally created for KitchenAid but I didn’t want to miss an opportunity to share it with you. Head over to the Kitchenthusiast blog for the full recipe.
