If you follow me on Instagram or Facebook, you saw that I spent last Saturday with the Florida Strawberry Growers Association. I love strawberries so I never pass up the opportunity to learn more about them. I came home with ten pounds of fresh Florida strawberries. The next morning I started the day with a big bowl of strawberries and cream oatmeal.

I can’t even count all of the reasons why I love living in Florida. The ability to grow produce year round is by far one of my favorite things about Florida. I visited the strawberry fields in California back in September, and this past weekend I had the opportunity to visit the strawberry fields here in Florida. If you know anything about me, you know that I am obsessed with strawberries.

I traveled with a group of other Florida food bloggers to Dover and Plant City, Florida to tour the fields and packaging facility. While much of the country is covered in snow, here in Florida we are growing beautiful fresh red strawberries. In fact, Florida is the largest producer of strawberries in the winter. We visited during one of the peak months of production. There were strawberry fields for miles and beautiful flowers and red berries peeking out from the fresh green leaves.

A bowl piled high with additional strawberries. A whole cup of strawberries has only 49 calories and is packed with fresh strawberry flavor. A big bowl of steel cut oats with fresh berries is the best way to start the day. This oatmeal is easy to make and packed with flavor. Buy yourself some fresh juicy strawberries and make a big batch of strawberries and cream steel cut oatmeal!

Strawberries and Cream Steel Cut Oatmeal

Save Recipe

Ingredients

  • 1 tablespoon coconut oil
  • 1 cup steel cut oatmeal
  • 1 teaspoon cinnamon
  • pinch of nutmeg
  • 1/4 teaspoon kosher salt
  • 2 cups hot water
  • 2 cups milk*
  • 1 cup chopped strawberries
  • 2 tablespoons pure maple syrup
  • additional chopped strawberries for topping

Instructions

  1. In a medium saucepan over medium heat, heat coconut oil until melted. Add steel cut oats and stir for 2 minutes to toast. Stir in cinnamon, nutmeg and salt.
  2. Add hot water and milk and stir, bringing to a boil. Cover and turn heat down to low; cook oats for 20 minutes.
  3. Remove lid and stir in strawberries and maple syrup. Continue cooking, uncovered for 15 minutes, or until oats thicken to your desired texture.
  4. Serve immediately and top with additional strawberries, as desired.

Notes

*you can use almond, soy or another milk alternative instead of the milk.

    Hi you have an asterisk next to the 2 cups of milk in the list of ingredients but I do not see an explanation. What do you suggest using in place of the milk? Thank you.

      Hi, Nancy! You can use almond, soy or another nondairy milk alternative in place of milk, if desired.
