Salad on a Friday?! I know, it shouldn’t be allowed. What you really want to be looking at a pizza or fries or dessert, salads are for Mondays. I promise you though, this Green Bean, Radish and Bacon Salad with Creamy Feta Dressing is a good one.

So, this green bean salad, let’s talk about it. Green beans aren’t something I go out of my way to buy at the store. I like them, but I’m never drawn to them as much as I am other vegetables. A few weeks ago I was at our farmers’ market with the intention of buying Colorado peaches. If you follow my blog, you know I’m obsessed with them and wait impatiently for them every year like a kid on Christmas morning. Yes, they are that good! Anyways, when I found my peaches, they just happened to be parked next to a couple boxes of green and wax beans. Well, I’m a sucker for any produce that looks good and these beans looked good! So I filled up a bag without a clue of what I would make with them.
Usually when I have vegetables and no plans to use them in a recipe I roast or grill them to put on salads. These green beans though were too pretty, I wanted them to be the star of a recipe. I rummaged through the fridge and grabbed all the ingredients I thought would go well together in a salad. Spicy radishes, crisp, salty bacon (bacon can only make things better), and feta because cheese. The combination of flavors and textures makes this the perfect summer salad, plus it’s a little different from the usual because no lettuce. Aside from those green beans, the feta dressing was pretty darn amazing! Creamy, tangy, salty and perfect on top of the salad. So, even though it’s Friday I highly encourage you to find some green beans at your farmers’ market this weekend and make this Green Bean, Radish and Bacon Salad with Creamy Feta Dressing!
