Whew, summer is here! Is it just me, or did we completely skip spring? I finally get to enjoy spending time outside and the ninety degree summer weather is here is full force. It is already getting to the point where I need to schedule a run in the early morning or late evening. I went for a run yesterday afternoon and was exhausted when I finished. The heat and sun deplete my energy much quicker. All I wanted to eat when I finished was a refreshing very berry acai bowl. Acai bowls are the perfect breakfast or post-workout snack. It is like a smoothie in bowl form with fresh berries and granola clusters layered on top.

By now, I am sure you have heard all about some of the world’s best “superfoods”. Packed with healthy nutrients and antioxidants, these foods will help you live longer – blueberries, quinoa and chia are a few.  But did you know that acai berries are also packed with antioxidants and healthy omegas. The reddish-purple fruit comes from the acai palm tree, which is native to Central and South America. So much goodness is packed into one little berry.

You can add almost anything for toppings to these acai bowls. I alternate between the berry bowl and a tropical bowl – with coconut, mango, kiwi and banana. If it looks like a simple recipe, that’s because it is. Just throw some berries and a banana into a food processor along with the frozen acai and you have a healthy treat.

I used the Sambazon Original Acai Berry Smoothie Packs. The single serving packs are great because you can add them to a smoothie, create a nutritious bowl or enjoy one right out of the pack as a popsicle.

Yields 1 large or 2 small servings

Very Berry Acai Bowl

Ingredients

  • 7 ounces frozen acai, softened (available in the freezer section of Whole Foods and other grocery stores)
  • 1 banana
  • 1 cup fresh or frozen strawberries
  • 1/4 cup almond or soy milk
  • handful spinach or kale
  • toppings:
  • 1/4 cup fresh strawberries
  • 1/4 cup fresh raspberries
  • 1/4 cup fresh blackberries
  • 1/4 cup granola clusters

Instructions

  1. Add the acai, banana, strawberries, almond milk and spinach to a blender or food processor. Blend well. Transfer mixture to a bowl and sprinkle with toppings.
