Today I’m sharing a versatile recipe that is enjoyed anytime and anywhere! Sweet potato toast is a fun twist on a classic. Switch out traditional bread with baked or toasted sweet potatoes and top with your favorite ingredients. We love eating these toasts for breakfast, lunch, dinner and snack. Our sweet potato toast recipe features six of our favorite combinations of toppings. Make one our favorites or create your own combination of toppings. How to make sweet potato toast

Making sweet potato toast is easy. Trim the ends off of a large sweet potato. Then slice the potato into 1/4 inch to 1/2 inch slices. We prefer 1/2 inch slices but you can slice them thinner, if desired. Cook the sweet potato slices in an oven or toaster.

Toast sweet potatoes

To toast the sweet potato slices in a toaster, you need to toast them a few times until they are cooked through. Toast three to five times on a medium setting, or until the sweet potato is cooked through. Or, you can bake them in the oven and then reheat in the toaster. To reheat, simply pop them in the toaster, top and enjoy!

To make baked sweet potato toast

Baking the slices in the oven is easy! Arrange the sweet potato slices on a baking sheet lined with parchment paper. No oil is needed. Bake at 400°F for 20 minutes or until the sweet potato is soft and tender. You should be able to easily pierce it with a fork.

Sweet potato toast toppings

You can use any of your favorite toast toppings on sweet potato toast. Below are a few of our favorite topping combinations.

  1. Nut butter, sliced apples, drizzle of honey and toasted pecans
  2. Smashed avocado with lime juice, cilantro and red pepper flakes
  3. Sautéed organicgirl baby spinach with fried egg on top plus black pepper or red pepper flakes
  4. Sautéed organicgirl I heart baby kale with garlic, prosciutto and shredded parmesan cheese
  5. Cream cheese, sliced strawberries and bananas, sprinkle of coconut or chia seeds or other topping
  6. Avocado, chopped tomatoes and sliced onions

Ingredients 

  • 1 large sweet potato
  • your favorite sweet potato toppings

Instructions

  • Preheat oven to 400ºF.
  • Slice the ends of the sweet potato off, then cut it lengthwise into 1/2-inch thick slices. Arrange the slices in a single layer on a baking sheet lined with parchment paper. 
  • Bake until the sweet potato slices are tender and easily pierced with a fork, about 20 minutes. Serve warm with your favorite sweet potato toast toppings (see full list of our favorite toppings above.)
  • Store sweet potato slices in an airtight container in the fridge for up to a week. To reheat, toast them in the toaster. (I use a 3 out of 5 setting on my toaster.) Top and enjoy!

*Sauté the greens in a medium nonstick skillet over medium heat. Add a teaspoon of olive oil and clove of minced garlic. Cook for 3 minutes or until wilted.
