Happy Monday everyone! Haley from If You Give a Blonde a Kitchen here and I am thrilled to be guest posting on Spoonful of Flavor. My inaugural recipe is a good one—especially if you’re a peanut butter chocolate lover.

You could say baking is my expertise, and I really shine when it comes to cookies. They are my favorite dessert to eat and give away (if there are any left). So I thought, why not make my first recipe on Spoonful of Flavor a cookie recipe? So here you have it, stuffed peanut butter chocolate cookies.

I’ve recently been obsessing over desserts that have surprises hidden inside them (I just made surprise chocolate kiss cookies for Valentine’s Day). I like to keep my taste testers, I mean friends, guessing when I hand over my most recent baked treat.

This time around I stuffed peanut butter inside chocolate cookies. On the outside, they appear to be sugary, chewy chocolate cookies, which they totally are. But don’t be fooled, there is a glob of gooey peanut butter inside each one.

Believe it or not, it is pretty easy to stuff cookies with peanut butter (who knew?) The peanut butter center is a mixture of creamy peanut butter and confectioners’ sugar. I rolled that into teaspoon-sized balls and wrapped each one with chocolate cookie dough.

Boom, there you have it, stuffed peanut butter chocolate cookies. And just to make these cookies really go the extra mile, I also rolled them in granulated sugar before baking. Now they have a sparkly and sugary exterior.

Pretty hard to resist, right?

Like I said, this is a cookie for all my peanut butter chocolate affectionados out there. Whether you are one or know one, this recipe is worth trying. These cookies have the element of surprise while satisfying all your peanut butter and chocolate cravings.

Stuffed Peanut Butter Chocolate Cookies

Yield: 24 to 30 cookies

Ingredients:

Peanut Butter Filling

  • 3/4 cup (94 g) confectioners’ sugar
  • 3/4 cup (190 g) creamy peanut butter

Chocolate Cookies

  • 1 1/2 cups (188 g) all purpose flour
  • 1/2 cup (50 g) unsweetened cocoa powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup (100 g) granulated sugar, plus extra for rolling dough
  • 1/2 cup (110 g) brown sugar
  • 1/2 cup (113 g or one stick) unsalted butter, room temperature
  • 1/4 cup (60 g) creamy peanut butter
  • 1 teaspoon vanilla
  • 1 large egg

Directions:

Preheat oven to 375° F. Line a cookie sheet with parchment paper and set aside.

To make the peanut butter filling, use an electric mixer to combine peanut butter and confectioners’ sugar. Place in the freezer for 15 minutes to chill (it will be easier to handle later on). Meanwhile, make the chocolate cookie dough.

To make the chocolate cookie dough, whisk together flour, cocoa, baking soda and salt in a medium bowl. Set aside.

In the bowl of a stand mixer (or using a hand mixer), combine sugar, brown sugar, butter and peanut butter. Mix on medium-high until light and fluffy, about 2 minutes, scraping down the sides of the bowl when necessary. Add vanilla and egg, and mix until incorporated, about 30 seconds. With the mixer on low, slowly add the flour-cocoa mixture to the dough. Mix just until combined, about 30 seconds.

Scoop about a tablespoon of chocolate cookie dough, roll it into a ball and flatten it into a disc. Then scoop about a teaspoon of peanut butter filling and roll it into a ball. Place the peanut butter ball in the center of the chocolate disc and gently wrap the peanut butter inside the chocolate cookie dough. Roll into a ball and roll in the extra granulated sugar. Place on prepared cookie sheet and repeat with remaining dough.

Bake cookies for 8 to 10 minutes, or until the edges are set and the tops begin to crackle. Cool cookies on cookie sheet for 5 minutes, then transfer to a cooling rack to cool completely. Store in an airtight container at room temperature for up to 5 days.
