If you don’t want to use bourbon, no problem! You can substitute the bourbon with apple juice or apple cider for a similar tangy sweet flavor. Do not use apple cider vinegar, as this is not the same. You can also use coconut aminos or tamari instead of the soy sauce.

Ingredients
  

  • 1 1/2 pounds skinless boneless chicken breasts or thighs
  • 3 tablespoons extra virgin olive oil divided
  • 3 cloves garlic minced
  • 1 teaspoon grated fresh ginger
  • 1/3 cup reduced sodium chicken broth
  • 1/3 cup low sodium soy sauce
  • 1/4 cup honey
  • 3 tablespoons bourbon (or apple juice)
  • 1 tablespoon rice wine vinegar
  • 1/2 teaspoon sesame oil
  • 1/4 teaspoon crushed red pepper or more to taste
  • Cooked rice for serving
  • Sliced green onions for serving

Method
 

  1. Cut the chicken into 1-inch pieces, then place them in a large bowl and toss with 2 tablespoons cornstarch until well coated.
  2. Heat the oil in a large skillet. Add the chicken, season with salt and pepper to taste, and cook for 5 to 6 minutes, until cooked through and golden brown. Transfer to a plate and set aside.
  3. Add the remaining tablespoon of cornstarch to a small bowl, then add the garlic, ginger, broth, soy sauce, honey, bourbon, vinegar, sesame oil and red pepper. Whisk well.
  4. Pour the sauce mixture into the skillet and cook for 2 to 3 minutes, until thickened.
  5. Return the chicken and juices to the skillet. Stir to coat and cook for 2 minutes, or until warmed through.
  6. Serve over rice and garnish with green onions.
